Château du Val de Mercy in Chitry-Le-Fort


The Domaine du Château du Val de Mercy has more than 30 ha of vineyards in the Chablis area, from which it produces its ‘Grands Vins de Chablis’. Two thirds (22 ha) of these vineyards are located in the AOC Chablis area and the remaining third (8 ha) in the ‘Auxerrois’ area.

Nearly all of the Domaine’s vines are at least 20 to 50 years old, producing wines of outstanding intensity and quality.

The Domaine produces predominantly white wines from Chardonnay grapes with the following Appellations: AOC Chablis Premier Cru, AOC Chablis, AOC Petit Chablis, AOC Bourgogne Chitry Bourgogne Coulanges, Bourgogne Aligoté and Saint Bris.

The Chablis Premier Cru wines are produced in two different locations (or ‘climats’ as they are called under the Burgundy wine-making tradition), known as ‘La Côte de Jouan’ and ‘Les Beauregards’.

A small vineyard is planted with Sauvignon grapes in St. Bris le Vineux.

Each year a selection of our wines are aged in oak barrels in the old vaulted cellars of the Château.

The Bourgogne Chitry white and red wines are produced from Chardonnay and Pinot Noir grapes respectively, grown in the vineyards of Chitry le Fort, in the Chablis area.

Pinot Noir grapes grown in the Auxerois area produce red wines with the following Appellations:

AOC Bourgogne Coulanges and AOC Bourgogne Chitry. These wines are aged in oak barrels following the Burgundy tradition.
